Whatcha Eatin?

Wish I could do popcorn with just seasonings. I always need a half stick of melted earth balance which is why I can't make popcorn that often lol. 🤦🏻‍♀️
Do you remember a butter type spray, like 10 years back, that was "accidently" vegan (not labeled vegan)?
I think it was talked about at the old Vboards forum. It isn't Parkay nor Can't believeit'snot butter.

I do miss liking microwave popcorn-man I used to eat a lot of it!
I do like a pot of the stovetop pop and sea salt. Orville butter flavor oil was good

I don't. 🤔. I know the I can't Believe it's not butter isn't vegan. My son uses it. They do have a vegan spreadable.
 
I made a smoothie yesterday so I had it for breakfast. It went all gloopy so I will make it fresh next time! Blueberries, banana and spinach. I'm going to have a toasted bagel and a black coffee.

That is one of my favorite combinations. If the banana is nice and sweet, I will sometimes add unsweetened cocoa powder and a little peanut butter to it. So delicious. Plus, the blueberries give the smoothie a pretty color. :)

Fried (rice-style) quinoa with peas, onions, carrots and green beans. This is a great way to use up leftover quinoa. I can see adding some cubed tofu to this as well. Yum!

Definitely tofu...kind of replaces the egg in fried rice. I do it often.
I ran out of my Bragg's aminos...I need to get more!

Oatmeal energy ball.

I just finished the last of the kale, quinoa and blueberry salad. This salad held up really well in the fridge over several days and never got soggy (I did initially divide it into four servings). I think because kale can be so chewy, it handled the dressing well. I will be making it again and it would be easy to switch up the toppings. I'm thinking mandarin oranges or dried cranberries for the blueberries, and maybe walnuts instead roasted peanuts.
