Whatcha Eatin?

I was just saying how I have to cook at home more, but the plumber said he was turning up so I went out (my husband was home) and I had a vegan breakfast at the local Buddhist cafe. Vegan bacon, sausages, baked beans, granary toast, grilled tomatoes and mushroom and some avocado.
 
This past Saturday I bought apples and a kind of "winter" squash I'd never had before: a green Kabocha squash. I washed it off, scooped out the seeds/pulp, cut it up, and cooked it in my slow cooker on "low" overnight. It's delicious hot or cold- I have leftovers in the fridge, but they won't last long!


This article isn't kidding about how good and big this variety's seeds are. I've heard that squashes are tricky to get to grow "true" from seed, but I'm saving a few to grow this summer.

One of these days, I'm going to try your style of oatmeal. :) It sounds so satisfying and filling.

I'm having some vegan mint dark chocolate.
 
An Impossible chicken patty in a toasted bun with pickles, onions, Vegenaise and ketchup. This is the best vegan chicken I've tasted to date. Beats Boca, Gardein, Morningstar and Beyond. Might even beat my beloved Quorn which is great because I can't get the vegan Quorn patties other than the spicey and you know how I hate red pepper flakes lol. I end up scraping most of the coating off trying to remove the flakes lol.

My son tasted the impossible chicken and said it's really good.

Wow, better than Boca? Because that's my favorite chik'n patty. I will have to try the Impossible patty. Yours sounds delicious, by the way. I have it almost the same way as you do, only no ketchup. I usually throw some pesto on it and sometimes vegan cheese.
 
I had a packet of crisps/potato chips when I got home and then remembered I was going to try and eat healthier! :lol:

I made a Quorn stir fry with green and red bell peppers and onion in a "beef" sauce.
 
Half of a toasted bagel with mashed avocado and a sprinkle of nutritional yeast. And yes, Miyoko's went on the bagel first, after it was toasted, haha.

And today is another day of oatmeal so I will list everything I put it - it sounds like it could be a lot of work and yet it is simple and quick and as the bowl is in the microwave the first time I line up the rest of ingredients and put away those I've already used.

In a pasta bowl sized bowl I put about 1/2 cup rolled oats, about a tablespoon of molasses, one date broken up and about 1/4 cup or so of soy curl crumbs and about 1 cup or more of water (I have never meaured but it is a lot). Into the microwave for 2 minutes.

Then the frozen berries are added, usually a mix of strawberries, blueberries, raspberries and blackberries. Back into the microwave for 2 minutes.

Then the rest of the ingredients are added - ground flax (1/4 cup), a couple of tablespoons of peanut butter powder, tsp of dark cocoa, sprinkle of cayenne, sprinkle of turmeric/pepper, 1/4 tsp on salt, tablespoon hemp hearts, 1/4 tsp vitamin C powder, tsp of greens powder - I then mix this altogether and you will see why it needs lots of water as the pb powder and ground flax needs absorption - after mixing well I slice the banana in, sprinkle it with cinnamon and put about 1/4 cup of walnuts and mix it all together again and then enjoy.

I did put all these ingredients into Cronometer back in September and it comes out to around 675 calories, 23 g of proteins, 87 g of carbs and 20 g of fat and 124% of daily fibre. We eat twice a day and normally around 1pm and 8pm.

I'm having a smoothie, so technically I'm drinking it. It has almond milk, frozen blueberries, a banana, spinach, peanut butter, unsweetened cocoa powder and some vanilla protein powder. So delicious!

That sounds interesting. I have never tried to combine spinach and blueberries. Did it make your smoothie green?
(TBH I would probably eat that banana and the blueberries after thawing, use the peanut butter and cocoa powder on some crackers and drink the almond milk. The food processor had a terrible sound, and washing the thing always made me depressed so I got rid of the thing without any remorse.)
