Whatcha Eatin?

I made the Just Egg sub again, so I'm having a quesadilla with the egg sub, Daiya cheddar shreds, onions, garlic and a Beyond breakfast sausage patty. I'd have added spinach or broccoli, but I'm out of both.

Scrambled eggs made with the mung bean Just Egg, a slice od toasted sprouted bread with vegan butter and an orange. The scramble was really tasty, especially with the Kala Namak (and hot sauce!). The tweaked recipe is still heavier than actual scrambled eggs, but they weren't so dense and chewy as the first batch I made. I will try adding the aquafaba next time I make the Just Egg. I am loving having something resembling eggs. :)

Some fresh Italian bread from the farmers' market. I feel a bit uncouth ripping chunks out of the loaf with my teeth... but it's so good...

one of my all time favourite things to do... hmmm... have to buy an uncut loaf when I am out next

today we are having the usual - steel cut oats, split red lentils, ground flax, date, molasses, cranberries, all in the pot then topped with banana, berries, turmeric, hemp hearts, maple syrup, walnuts and a side of peanut butter toast

I was thinking of looking for a bread making class as I love bread so much. I could prob just learn it from YT.🤔

I had a big bowl of steamed veggies with gravy earlier and I was craving something healthy.
 
The last of my good Italian seitan sausages.
Don't know if I mentioned it, but I made a second batch where I forgot to add the mashed beans with the wet ingredients and made the dough without them. I tried kneading them in after and it did NOT fare well! Such an ichy texture-to have like layers of mashed beans 😝.

Freshly-made bread- still hot or warm from the oven- is UNREAL (in an almost-impossibly good way)! Anna Thomas, in one of her "Vegetarian Epicure" books, wrote that she thought it was healthier to wait until the bread is cooled to eat it, but admitted that it's "really delicious (as wicked things are wont to be)". I don't know what would be unhealthy about it, aside from 1) possibly burning your mouth if you're REALLY in the grip of your craving, or 2) eating too much of it at one sitting.

Anyhow: I don't think making your own bread is that hard to learn- except that in my case, I added too much flour to the dough when I first started baking. This made it less sticky, and somewhat easier to knead- but it also kept the dough from rising as much as it should. The bread was VERY chewy and dense; a fruitcake would have seemed like angel food cake by comparison. It would have made an ideal fallout shelter (I exaggerate only slightly, and I love fruitcake). The problem was, I was using 100% whole grain flour; making your first loaves with 50-100% white flour would make the dough easier to handle and a much lighter bread. (I also think it would taste just as good as wholegrain).
