Whatcha Eatin?

I was talking online about making bread this morning and I remembered there is a really nice bakery near my class. I bought a gorgeous loaf and had three slices with vegan butter. Yum!
 
I had a new burger, sweet potato, black bean and Chipotle. I had it with Leon burger sauce and a green salad. Very nice.

I'm getting a bit sick of mock meats as I have been eating so many of them since my husband went vegan.

Finger sandwiches made with granary bread, spread, Dijon mustard, smoked tofu & Applewood cheeze.
A red cabbage slaw with vinaigrette, chia seeds, raisins and yeast flakes.
An orange.
Shandy made with Desperados tequila and lemonade.

I had another sweet potato burger in a pitta bread with lettuce and burger sauce for lunch. Chocolate afterwards.

Dinner will be refried beans, rice, corn, tomatoes, bell pepper and hot sauce.

Last night's leftovers:

Whole wheat orecchiette bol made in a rich wine sauce plus some added spinach after being cooked in the IP. Served with
melted Applewood, a sprinkle of yeast flakes/Vermondo Italian style cheeze and a drizzle of evo. I also added a huge sprinkle of Cornish
smoked sea salt which gives it both a fabulous texture and extra taste.

Mine, too! I was supposed to make the pie for Christmas, but we didn't really have our Christmas this year due to all that was going on with my mom and pops. I still have filling in the freezer for another one, hehe.

You are lucky to find plant-based ones, as most of the ones here have dairy or egg in the crust.

I had some oatmeal pancakes from the freezer topped with maple syrup.
Apple pie is second to strawberry rhubarb for me--and easier to find, or make, vegan..
Aldi sometimes has a double crust apple pie that's been vegan--ingredients are on the bottom of the box though 🙄 :laughing:
 
At work we got to order out for lunch in return for making them so much profit. :dismay:
I got fried cauliflower bites, which were 'ok'. The sauce was just like the bottled sweet chili sauce, no spice. I also got hummus that came with parmesan pita bread and cucumber-which I took home. My son loved the pita bread, and let him have half the hummus. I just don't like hummus anymore, don't know why I keep trying. Actually I do, it's often the only veg option
Anyway, the cucumber and hummus I just ate is making me burp and it's yucky :yuck:

LOL on the ingredients being on the bottom of the box. I don't think I've ever seen apple pie at Aldi. My Aldi just doesn't carry a lot of what other Aldis seem to have. :( I would love strawberry rhubarb pie, but I'm allergic to strawberries.

I'm having my leftover Chinese food for dinner over rice noodles.

I'd love just a rhubarb pie! I tried growing it and failed. So expensive in markets, and such a limited time
I haven't seen that pie in some time, but it is on shelf with the breads and stuff. I look for it!
There are 3 Aldi in my area and each one is laid out very differently .I've found it isn't so much they don't carry the same stuff but in very different areas of the store. I have one I can walk to and I know that layout by heart. I hope they don't ever change o_O

A granary baguette sandwich with spread, smoked tofu and Dijon mustard.
Carrots cooked in the IP with a drizzle of evo/yeast flakes.
Coconut milk yogurt/sweetener.
