Whatcha Eatin?

I made a good deli seitan, with I guess pastrami season blend, and other stuff. Wanted to make rye bread, but bought Aldi 12 grain. Not really sure if all vegan, but it is good.
Had a sandwich with v mayo and iceberg
I'm always jealous of your seitan. I never mastered it so I gave up. *sad face*

I'm on my wireless keyboard and there are no emojis, hence the *sad face*. *lol*

My seitan hobby was like your bread hobby, just kept trying till I got what I liked
I didn't like the first one at all, but my son did and I hate when people like my foods and I don't, so I kept trying
So much to learn-the feel, ratios, temps, rests.
Deli style is quick and easy cause there's no need for blender
Basics are the same amount liquid as vwg. I start with the liquids and blend in all the flavor. Then add the same amount of vwg as liquid and 1/4 that amount of instant potatoes (you could use AP flour or a starch, or even nooch but I find the instant potato flakes best) Just mix till all absorbed and cover and forget about it awhile.
Now of course I wrap in foil and put on rack over water in Instant Pot, but could also wrap and bake for and hour to 1.5 hours at 350. Slices thin and better the next day
 
A very small portion of gnocchi in a spinach sauce/smoked chipotle flakes, yeast flakes, melted Applewood,TJ's Everything except leftover seasoning, cooking water and a huge drizzle of evo.

Ww artisan toast with spread and a banana.

Those of you eating overnight or soaked oats...do you warm them up before eating or eat them cold/room temp?

I do like refrigerated overnight oats and mostly have them cold during the warmer months.
I eat mine cold. I do like hot oatmeal, too, and in both cases I add a few things, such as apples, walnuts, raisins, maple syrup (not all of these at once, haha), blueberries, bananas, etc.

I'm having toasted homemade bread with vegan butter on one slice and PB on the other.

I prefer artisan style toast and spread to porridge anyday.

yes, as today is also my rolled oats/soy curl crumb day with the multiple ingredients hmmmm I just remembered that cayenne is also one of my ingredients so it may be a total of 16 .... I love the extra kick

just water... I use a pasta bowl and put in about 1/3-1/2 cup of rolled oats, then pour in water from the boiled kettle, likely a good cup or so, put in the molasses and the soy curl crumbs and one date and then microwave it for two minutes - then I add the 'frozen' berries and microwave it again for 2 minutes - there is still liquid visible when I take it out and so then I add the ground flax and peanut butter powder first so they start soaking it up and then all the other ingredients on top... cayenne, turmeric, dk cocoa powder, hemp hearts, vit c powder, greens powder, bit of salt, cinnamon, banana (not every time), walnuts, pumpkin seeds .... mix it altogether so it looks like a delicious dog's breakfast that, yes, is both sweet and savoury

I did put it into Cronometer once and I believe the total calories was around 650 or so - keeping in mind that this is my first meal of the day, usually eaten around noon or so and then just one meal to go after that.

edit: today I am also adding a partial can of lentils that is in the fridge and a few beans from my honey's bean soup he is having

I also cook oats in water with a pinch of salt or the Scottish way.

Mine are less elaborate compared to yours.🥹

it looks like it might be complicated however I just line up all the ingredients on the table during the 2 x 2 minute microwaving bits and then put them away as I add them - I think I will call them Hearty "Everything but the Kitchen Sink" Porridge :joy:
