Whatcha Eatin?

I had elbow macaroni with canned kidney beans, tomato sauce, and a bit of canola oil for late lunch/early dinner. Simple, but quite good.

I cooked the elbows in my slow cooker: I heated up the water to a simmer and then added the macaroni- otherwise the elbows would have been VERY overcooked and mushy. I drained them, added the beans and sauce to about half of them, and put the rest in the fridge after they had cooled.

A mung bean just egg omelet with vegan cheddar and red onions topped with a little hot sauce; a piece of sourdough toast with vegan butter; cold brew coffee.

going to keep it simple with our usual orange/banana sliced, breakfast beans and a bagel with Just Egg patty

ended up having a w/w pita wrapped around a banana w/peanut butter and jam instead and today I am hoping to have my noodley soup although I need to go and stand in the queue at the post office as we are finally coming off a postal strike and hoping that my Christmas cards might make it in time

I had a breakfast burrito with mung bean egg, avocado and home fries. I also had a couple of graham crackers.
 
We ate out at a Swedish vegan cafe in London called DAUNS. We ate too much! We ate a sausage roll each and a toastie each, mine was ham and camembert. We also shared a croissant with jam and a spiced apple crumble with ice cream. I had some mulled wine too. Very nice food.:)
 
I had a mung bean egg omelet with sautéed kale and red onions, topped with kala namak and some hot sauce. This was still tasty despite no vegan cheez this time. I have found that if I eat the vegan cheez too. many days in a row that it bothers my stomach, so I figured I'd try today's omelet cheez-free. I put some Italian seasoning in the mixture while it was cooking, and that really added some nice flavor.
