Supper/Dinner Time! What's on the menu ?

We had some basmati rice leftover from yesterday so I fried some onion, peppers and frozen peas, added some veg Oxo, soy sauce and mushroom soy sauce and a little black bean chili paste, then stirred the rice in with it. It was heavenly!

I'm going to have a black bean burger with air-fried potato wedges. I have friends coming Thursday for several days, so I will be doing lots of other cooking today and tomorrow. It's nice to have things in the freezer ready to go.

Pan fried happyvore bangers, wilted spinach, sauteed courgettes & onions, 3 grain quinoa.
A tossed gem lettuce salad with vinaigrette/yeast flakes.
Strawberries & organic soya yogurt/sweetener.

I'm leaving tomorrow so had to eat leftovers and all of the fresh produce.
 
falafel pita wraps with romaine/arugula, cherry tomatoes, cucumber, green onions, sauce made from tahini/hummus/maple syrup/lemon juice/garlic powder/cumin/dry mustard - Ikea ginger snaps/almond slivers for dessert

last night was Taco Friday - used Future Farm ground with onion/jalapeno/spices and a few leftover kidney beans, Que Pasa blue corn tacos, cheez shreds, pico (green onions, cherry tomatoes, olives), shredded romaine, salsa
