Supper/Dinner Time! What's on the menu ?

Sunday roast (brisket) at the Roundhill in Brighton. Went to my usual Vegan meetup and it was nice to see some of the members that I hadn’t seen since October. There was also a Portuguese couple and a young French man who were all lovely.

Kebab "meat" with onions and peppers in a smoky sauce, Basmati rice, Cauliflower and broccoli, pickled gherkins and rårörda lingon.

simple tortilla chips on a plate sprinkled with cheez shreds, salsa, olives and microwaved for 45 sec then dipped in hummus

Monday night we had our Swiss Chalet dinner - potato/sweet potato chunks in the air fryer, Gardein Chkn tenders with the dipping sauce poured over

last night we made some corn tortillas again except instead of using the tortilla press we just made them extra watery so we could pour them into the pan - it kinda worked and we only made 4 as it was experimental - certainly easier then pressing them

with them we had a can of pinto beans mashed with salsa/spices, mexican spiced rice, sauted bell pepper, onion, jalapeno - it was excellent

I'm really feeling tired. I'm not sure if it is because I got up early the past couple of mornings or maybe as I had blood taken yesterday. I ordered an Indian takeaway as my husband is out and I didn't feel like cooking anything!

A stir fry (Sainsbury’s deal) with teriyaki sauce and added Quorn chunks.

Lemon drizzle cake.

Life is good in Brighton for vegans.

The other night I made a skillet of cannellini beans, mushroom, zucchini, stewed tomatoes, onion, garlic and lots of spices with tricolor quinoa on the side.

Sainsbury’s Cumberland style bangers with portabello mushrooms, corn on the cob/spread.

Grapes.

Plant Pioneers salted caramel ice cream. Possibly the best supermarket ice cream ever.

I had a mashed avocado sandwich on tiger bread and then a vegan ice cream. Yummy!

last night we had gnocchi with Ikea veggie balls - I made the sauce for the gnocchi from a combination of leftover spag sauce and "pesto'd" some mixed greens in lemon juice and mixed them together - the sauce is an ugly brown colour yet it tasted good

I blend soaked raw cashews in the vita mix with enough water to make a smooth thick creme, and then add like a Tblsp lemon juice, equal amount of plain yogurt, and blend to combine.
