Supper/Dinner Time! What's on the menu ?

I had navy beans, white rice, and fresh greens cooked in my slow cooker. It can be a bit tricky: the beans take the longest, the rice takes about 20 minutes to cook, and the fresh greens don't take long at all. The beans aren't tricky because overcooking them does no harm, but it sucks when the rice or greens are over- or under-cooked. I think I've learned to time everything; at least everything came out right last night. I added a bit of vegan soup broth and vegetable oil before eating, and had leftovers for another meal or two later.
 
I'm making fajitas tonight. I might use like some sort of mock chicken tenders or maybe just some sliced portobellos, along with some traditional bell pepper and onions.

A really good curry with cauliflower, green beans, carrots, green peppers, onion, garlic, spinach and tofu. I just used a small can of red curry paste and a can of coconut milk. I spent so much time getting all the veg cooked just right. It is delicious!

Pan sauteed soya curls/courgettes/onions/peas seasoned with M&S fried chik'n seasoning and smoked paprika deglazed with lime juice & Terrayki sauce served with brown rice.

An oat milk chocolate bar.
