last night I made the Burmese Tofu from Simnett Nutrition's youtube channel - basically chick pea flour (spices added) and water, refrigerated and then cut into cubes and air fried - on salad and with a peanuty spicy hummus lemon sauce
a delicious vegetable fried rice with asparagus, celery, baby peas, onion, garlic, mushrooms and some small soy curls soaked in garlic powder and poulty seasoning and then sauted briefly in a bit of tamari

Might be the first in a long time that's all I wanted for dinner, but now it's getting on bed time and I'm hungry
