Supper/Dinner Time! What's on the menu ?

Farro with baked (seasoned) tofu and a raw salad (the salad was made of leafy greens, tomatoes, onions and shaved carrots - with a sprinkle of a light soy sauce, lemon and tahini as dressing).

After the main meal I had a mix of nuts and dried fruits as dessert.

All good.
 
my honey made most of dinner again last night - he has been wanting rice paper wrapped veggies dipped in spicy peanut sauce - he did the hard work of chopping the cabbage, onion, carrots, green onions, cucumber, spicy mustard sprouts and then rolling them up - I made the spicy peanut sauce and it was a delicious meal - I had a small piece of w/w baguette on the side and then carrot cake for dessert

Yesterday I went out with my family to a restaurant with lots of vegan options: as main meals, we went for a vegan salad (which included leafy greens, avocado and quinoa), miso soup with tofu, vegan dumplings (a small portion with only three small pieces) and vegan sushi.

How do you do the rice paper wrap? Just soak and roll and eat like that? Do you do anything to dry/crisp it?
I loved it crisped in the oven, but have a lot left over to experiment with!
I know lots of people use it to wrap baked seitan roasts, I'll try that too
 
I made a sweet and sour stir fry with the frozen vegan spam, frozen stir fry veggie mix (I am out of fresh, I need to go to the produce stand), some of a can of fruit and a sauce I improvised. It was pretty good. A couple of pieces of the broccoli were funky.

Okay! Now I have to make that spam recipe! I like carmelized pineapple, rice and ham

I finished the jackfruit/gluten wraps I made with a Katsu sauce and broccoli

he just soaked it and then wrapped it and we let it sit for a while to dry before eating - I hadn't thought of crispying it as I have only seen High Carb Hannah wrap and eat them

Yesterday a friend gave me a bunch of freshly picked cherry tomatoes from her garden and they were starting to split so we made another pasta dish with the tomatoes, garlic, basil, onion, kalamata olives on spaghettini - delish.

I have seen High Carb Hannah make those too. Do the rice paper wraps taste like rice?
 
The day before yesterday I experimented with Wakame seaweed- this was the first time I ‘prepared‘ them at home. I bought them dry, just added hot water and, just after a few minutes, they really increased in volume. I then rinsed them, added leftover chickpeas and put a light soy sauce and a little mustard as dressing.

It was a quick and impromptu seaweed salad, but better than I expected. I understand seaweed like Wakame is a good source of iodine, which, according to Dr Fuhrman (“Eat for Life“) is one of the nutrients that vegans need to be more conscious about (besides vitamin B12) -as many of us are at a higher risk of not getting sufficient amounts of it through our regular plant-based diets (particularly if you are outside Japan and trying to avoid other more easily-available alternatives, like iodized table salt).

Yesterday I had a fully-fledged Indian dinner: rice, dal (lentil stew), and cooked vegetables.
