Supper/Dinner Time! What's on the menu ?

it was unhealthy night - split a bag of french fries and had Gardein Fishz Fillets with malt vinegar, ketchup and for dessert I saw an add for a chocolate bar with peanut butter in each square and it made me crave chocolate and peanut butter - I had a few dark chocolate covered graham cracker cookies in the freezer to I made chocolate cookie peanut butter sandwiches out of them - they were a big hit...

Last night I had a green salad (with balsamic vinegar as dressing- very nice), buckwheat (one of my favorite whole grains, a close second to farro and quinoa), and a mix of black beans, mushrooms and corn (cooked/heated on a pan with some spices and tomato paste). All very good.

For dessert: mashed banana mixed with dried fruits, dates and nuts, topped with cinnamon and almond butter. Very nice too (it is so easy to make - a 3 minute dessert, very tasty and packed with fiber and nutrients- highly recommended)
 
we made another delicious bean/pasta combo - tiny elbow macaroni, black beans, chopped onion, garlic, bell peppers, roma tomatoes, chili peppers and some leftover spaghetti sauce mixed in - before dinner we had a snack of whole grain/seed baguette with hummus so none with dinner

Yesterday I managed to make basil pesto from scratch - I used white beans to give it texture, added garlic, lemon, nutritional yeast, walnuts, some spices, liquid from the can of white beans - I put it all in a blender-and done! Turned out nice.

Then I cooked some tofu on a pan, and tossed steamed broccoli; green peas and corn (both from frozen bags), and mushrooms into the pan, alongside the tofu, with some condiments…

While I was cooking the tofu and veggies, I prepared some Soba noodles (they are healthier options compared to white pasta and have buckwheat as a main ingredient).

Then I tossed everything into a bowl - pasta, veggies and pesto- adding some avocado, and mixed it all very well. It turned out very ‘yummy’ (see photo).

It looks like a lot of pesto, but it is oil free- and most of its volume comes from white beans, so it was relatively light (with just a few walnuts)…the whole dish I made is for at least two large servings (will have a second serving later in the week)

For dessert: mashed banana mixed with dried fruits, nuts and topped with cinnamon, dried coconut flakes, almond butter and tahini.

All very good!
 
a very yummy dinner last night - lots of boiled potatoes, pan sauted mushrooms, mushroom gravy, hot hamburger sandwich with Future Farm burger including the bun and a side of my honey's homemade red cabbage/onion/a few banana pepper mixture - we had an almost empty jar of banana peppers so we used the juice for the pickling of the cabbage/onion - pretty crunchy still

last night we had bean dip which we haven't had in a while - mashed my own refried beans (1.5 cans of pinto beans) and added spices, 1/2 zucchini, 1/2 bell pepper, jalapeno, onion, salsa, olives and had some cheez shreds on top - scooped up with tortilla chips

HOT vegan ramen and I added Boc choy, spinach, collards and the last of the seitan steak.
I ate half, so full. I did not need to add hot sauce, it is so hot.

love it! sounds like my noodley soup, on steriods lol

last night we had a falafel dinner - amazing rice, falafels, some leftover potatoes garlicized & buttered, a ton of homemade tabouleh - so delish
