Supper/Dinner Time! What's on the menu ?

last night we had noodles - he made is own and I made mine - Udon noodles with some soy curls, thai style veggies in gochujang and topped with a spicy peanuty sauce (peanut butter, soy sauce, rice vinegar, lemon juice, cayenne, sriracha)

Last night I had ‘buckwheat biryani’ (cooked with mushrooms, sun dried tomatoes, green peas and corn). For dessert: mashed banana mixed with dried fruits, nuts, cinnamon and coconut flakes. All good
 
a Mexican Chipotle Field Roast Sausage on a bun (mustard, ketchup, sauerkraut, spicy banana peppers) with a side of Ryvita Dark Rye crackers and some of the faux swiss cheese we still have, and some jalapeno stuffed green olives

Leftover ‘buckwheat biryani’, mixed with beans, plus a simple, home made, ‘guacamole’ (also mixed with beans for a twist), and home-made, super simple, oat flatbread. For dessert: a nice large mango, and a small bowl of dried fruits, dates and nuts mixed with almond butter and topped with dried coconut shaves. All good.

Yesterday I had an improvised, hearty, vegan stew. It was initially intended to be a soup- it ended up being more solid than expected, but still very good. It included leafy greens, potatoes, onions, corn, green peas, green beans, pine nuts and herbs.

For dessert: I bowl with dried fruits (including figs, raisins), dates and nuts, mixed with blueberries, and topped with dried coconut flakes, almond butter and tahini. All very good.
