Supper/Dinner Time! What's on the menu ?

As main dish: Farro and quinoa mix, with cooked green vegetables and potatoes on top, and mustard as dressing; home-made oat flatbread on the side. For dessert: mashed banana mixed with nuts, dates and dried fruits, and sprinkled with almond butter and tahini. Both were very good.
 
leftovers supreme - the pinto bean soup with added leftover mexican rice and the root vegetable mash from the night before - drizzled with lemon juice and sprinkled with Keene's mustard & hot sauce & nooch

Yesterday I had another ‘large-salad dinner’ . The salad included leafy greens, tomatoes, bell peppers, spring onions, herbs; dili chickpeas, farro and quinoa; it was dressed with the basil-mint sauce I made a couple of days ago. For dessert: mashed bananas, mixed with dates, dried fruits and nuts, and topped with cinnamon, almond butter and tahini. All good.
 
Yesterday I was invited for dinner- as a main dish I had white rice with dahl (lentil stew), chickpea curry and roasted eggplants - with a small piece of bread. When I returned home I made myself a light dessert: a mix of blueberries, dates and dried fruits- topped with cinnamon, almond butter and tahini. Very good.
 
we had a late supper last night and so we both made ourselves noodles - it was similar to my noodley soup except I didn't put in any frozen vegetables, instead I put in a green onion, 2 mushrooms, and ton of kale & bok choi, as well as some soy curls

Yesterday I had vegetable soup - which included leafy greens, brown chickpeas, spring onions, potatoes and herbs. I made it creamy by using the blender to purée a portion of the soup, including the cooked vegetables, and then throwing the puréed portion back into the pot with the non-puréed portion. I also had a salad, with balsamic vinegar as dressing, on the side. For dessert: a mix of dates, dried fruits and nuts - topped with coconut flakes, cinnamon, almond butter and tahini. It was all very good.

I picked up some smoked tofu last yesterday as I wanted to make vegan BLT for dinner - I won't buy it again, tempeh is much better - they were okay and filled us up but not wonderful - I sliced the tofu thinly and put a bit of sesame oil/soy sauce/smoke on them and toaster oven broiled them on each side - one slice of faux swiss, bok choi for lettuce, thick beefsteak tomato, and the tofu with 3 slices of whole grain bread - pickles and potato chips on the side.

Yesterday I had a plate of vegetable stew (which included farro and quinoa), added fresh leafy greens on top, and drizzled it all with my home-made basil-mint sauce. For dessert: a full mango and two persimmons. All very good.

made a HUGE pot of pinto/navy bean soup although I must admit that most of it was vegetables - mushroom, onions, garlic, carrot, parsnip, celery, zucchini, sweet potato, white potato, can of chopped tomatoes, kale, bok choi and so on...

it was delicious and had a quarter of a whole grain/seed baguette

there are tons of leftovers so will freeze some and have some Monday or Tuesday

I'm not sure yet, maybe a chicken burger in a bun with a big salad with avocado if any of the ones I bought yesterday are ripe.

Yesterday I had a green salad, to which I added brown chickpeas, farro and quinoa - dressed with a rich sprinkle of balsamic vinegar, blended lemon and basil-mint sauce. To complement, I had a middle-size plate of vegetable stew mixed with farro and quinoa as well. For dessert, I had a couple of persimmons, followed by a mashed banana mixed with dates, nuts and dried fruits- with a sprinkle of cinnamon, almond butter and tahini. All very good.
