I had saltines with sliced Violife vegan cheese and then pesto pasta topped with chopped Gardein 7-grain tenders.
I'm doing the same, as I'll be gone for several days starting tomorrow. I think I will have the last of the buffalo tofu nuggets with sides of spinach, peas and pickled beets. The beets are fine to stay in the fridge while I'm gone, but I want to finish up the tofu, spinach and peas.I have some fresh stuff to use up before we go away for a few days. Three red bell peppers, carrots, tomatoes and lettuce.
I'm thinking of doing a Quorn stir fry as I have chopped onions in the freezer. A big salad should take care of whatever is left. Maybe with baked potatoes and vegan sausages. I'm not sure which one to make tonight for dinner.
