Supper/Dinner Time! What's on the menu ?

spaghettini with lots of mushrooms, garlic, onion, cherry tomatoes, black olives, and I made a pot of brown lentils and mixed in some spices and then put a few tablespoons of them in with my pasta - I am still feeling full this morning

Yesterday I had a plate of vegetable stew (which included farro and quinoa), added fresh leafy greens on top, and drizzled it all with my home-made basil-mint sauce. For dessert: a full mango and two persimmons. All very good.

yup, last night was breakfast for dinner.... breakfast beans in a bowl and then made a toast sandwich with hummus as the spread, thick slices of tomato, some smoky tempeh and a Just Egg patty with a few shreds and some pickled jalapeno... then I spoiled the healthy meal with some chocolate with mint icing sugar... :rolleyes:

Leftovers:
A spicy borlotti bean/soya curl/mushroom stew made in the IP served with yeast flakes, a sprinkle
of smoked chipotle flakes plus a drizzle of evo.
Toasted sourdough ww baguette with Flora.
Brussels with evo/yeast flakes.
Apple puree plus a few pink plums.

Three days ago I had ‘sambhar’ (a traditional South Indian lentil and vegetable stew), with rice and cooked vegetables, and some raw greens with mustard and tahini as dressing. For dessert: home-made oat & raisin cookies.

The day before yesterday I had ‘dahl’ (lentil stew) with rice and cooked vegetables. For dessert: home-made, dairy-free, no-sugar-added, chocolate ice-cream.

Yesterday I made Vegan Moussaka (photo below) since I really enjoyed it last time I made it. It was, again, very very good ;-) - I followed this recipe, but tried to reduce oil and salt suggestions - The BEST Vegan Moussaka. I also had wakame (seaweed) with vinegar as dressing on the side.
For dessert: I had my ‘mashed banana mix’- adding, besides the dried fruits and nuts, old fashioned rolled oats and papaya. Almond butter and tahini as dressing. Very good.

my honey made tabouleh yesterday and so we had falafels with roasted potatoes, carrots, parsnips, onion with it and a bit of hummus/garlic sauce on the falafel - it was delicious however he put too much raw garlic in the tabouleh and it didn't sit well immediately after eating - a great way to clean out the system (TMI I know)
