Supper/Dinner Time! What's on the menu ?

A salad made with leftover brown rice, grated carrots,organic corn, avocado, pumpkin seeds plus vinaigrette
and yeast flakes.
A mini sandwich made with ww sourdough baguette/Flora and Cathedral City cheddar style cheeze.
A persimmon.

Just wanting to use up the leftovers, as a sandwich isn't really my idea of a nice dinner.
 
made a delicious dinner last night, if I do say so myself, I used the ground meat by Future Farm and made a type of bolognese... no carrots or celery in it, instead mushrooms, zucchini, onion, garlic, spices and a can of chopped tomatoes... it was awesome with mixed with fusili

Leftover vegan moussaka and bean pasta with tomato & vegetable sauce. I had placed leftovers of both dishes in the freezer, and had them defrosted yesterday- they were still very good.

For dessert: a small bowl of dates, dried berries and cashew nuts with a sprinkle of tahini. Very good too.
 
plate nachos - sauted onion, bell pepper, jalapeno, spices and added a can of black beans, chopped cherry tomatoes and green onions, spread out the tortilla chips on our plates and then started piling adding salsa, cheez shreds, black olives and pickled jalapeno and then popped into the microwave for a minute and a half - for dessert a date, 2 brazil nuts and 2 almonds

Amy`s Thai pad noodles which were okish but too sweet< I arrived in California after a very tiring nearly 23 hour trip and
needed something quick and simple.
