Supper/Dinner Time! What's on the menu ?

Yesterday I made lentil stew (I added tomatoes and carrots to the stew); I poured the stew over barley, and then sprinkled some parsley on top of it (photo below). Very nice.

As a side dish, I had home-made, oil-free, hummus (with parsley, olives and a few pine nuts sprinkled on top of it) - I spread the hummus on top of home-made oat bread and a small slice of (store-bought) barley bread. Very nice too.

For dessert: home-made, dairy-free and sugar-free, chocolate ice cream - with walnuts. dried barberries and dried coconut flakes sprinkled on top of it (photo below). Extremely Yummy. Plus: one persimmon (very good too).

I'm making meatball subs tonight with a mixture of Impossible ground and red lentils. I also add raw minced potatoes to my meatballs, which gives it both a pleasing taste and texture. I actually stole the recipe from a restaurant I worked at over 40 years ago, but have since adapted it to meatless ingredients.

I love that idea of putting in the minced potatoes. I might have to try that. I have some Beyond ground I could use.

I'm having another vegan Philly cheesesteak. Good football food.

On Friday, I had a vegan Reuben at a diner in New Jersey before going to a concert with a friend. The diner had a separate vegan menu, which was great. The Reuben was very good, but it wasn't quite as good as the one I had at the Shoreline Diner in CT. I think it needed a bit more spice in the dressing. Still, I was so grateful to have a number of options. And I had a vegan lemon/raspberry square for dessert that was pretty tasty. It was more like a cheesecake consistency with a cakey bottom, so it wasn't what I expected, but it was delicious nonetheless.
 
Cooked a pot of pinto beans and mixed with TJ's soy chorizo and made into a burrito with onion and Violife colby-jack cheese shreds
Don't know why I don't do that more often! I would never make to freeze, but I could wrap individually and fridge for lunches
 
Yesterday I had another serving of lentil stew on top of barley. As side dishes: a small serving of salad, plus oil-free, home-made, hummus, topped with a few pine nuts, parsley and olives (see the ‘zoomed-in’ snapshot below). The hummus was spread on barley bread.

For dessert: more vegan, home-made, chocolate ice-cream- I topped it with cashew nuts, dried coconut shaves and dried barberries.

It was all very nice.

On a side note: I prepared large batches of hummus and ice-cream for a ‘potluck’ lunch I had yesterday. With hindsight, I made too much - so there is plenty of leftovers: this means I will be having plenty of both dishes for at least a couple of days, which I do not mind at all, as they are both very nice; I am sharing some hummus and ice-cream with my neighbour too : - )

Yesterday I had a take-away for dinner: potato wedges and vegetable fried rice, plus one chocolate and date dessert; with soda drinks. It was a heavy dinner. I went off track my regular routine; will try to get back on track this evening (I still have hummus left, plus home-made stew and barley).

I had nice wide uncut bread to made a total of 3 thick sandwich slices, toasted them and the made mashed chick pea filling for the insides and we split them in half and ate with pickles and potato chips on the side and some chocolate bark for dessert

the filling had green onions, celery, lots of spices, apple cider vinegar, mustard, maple syrup, hummus/tahini

took some of my frozen lentil beans out and made a quick soup - potato, carrot, parsnip, onion, can of tomatoes, lots of spices - it was good and had some w/w pita to scoop it up - chocolate bark for dessert

The day before yesterday I had lentil stew, which I poured over barley, with some parsley sprinkled on top. For dessert: home-made vegan chocolate ice-cream, with tahini mixed in; plus one persimmon. All very nice

Yesterday I made ‘spiced’ brown rice (I cooked the brown rice with sun-dried tomatoes and green peas mixed in, besides the spices); so for dinner I had chickpeas alongside the rice, with parsley, tahini and hummus sprinkled on top of the rice-chickpea mix; plus: I had some of the leftover hummus spread over barley bread. For dessert: a persimmon and ‘mashed banana mix’ (with nuts, dates, dried berries, coconut dried flakes, almond butter and tahini). It was all very nice

A very quick meal as our dinner at the CC was cancelled as my cousin`s husband was ill. I heated up some Italian style white bean and vegetable soup with a ww cranberry and walnut roll plus spread.
I made myself some ww linguine (Sprout`s) with a sauce made from
the leftover vegan sausage roll mixture plus extra tomato passata/melted TJ`s cheeze/evo and yeast flakes.
SD coconut milk chocolate ice cream which tasted awful. The texture was hard and it was a pain to eat. :sob:

we made 'fried rice' last night - onion, green onion, garlic, celery, carrot, bell pepper, mushroom, a couple of Just Egg patties cut into pieces and I cut up some firm tofu into small pieces, marinated them in soy sauce/garlic powder/sesame oil and then air fryed them - it was delicious and we ate every last morsel of rice...
