We will be having something Swedish that M has cooked. I'm not sure exactly what it is but she has veganized it from her grandmother's recipe and it involves mince and a particular sweetened pickled beetroot. I will be boiling some small potatoes and preparing a salad to go with it.
Saturday night aglio y olio, my honey cooks on Saturday nights and I sous chef... mushrooms, garlic, chili peppers, whole kalamata olives - it was good just not his best.
Whole grain pasta, with home-made red sauce (cooked with leafy greens, corn, chickpeas).
For dessert, I had a mango and a bowl with mashed banana, dates, dried fruits and nuts, with a sprinkle of cinnamon and tahini.

hmmmm should I admit to what we had? hmmmm - leftover hummus, salsa and tortilla chips, homemade chip dip from onion soup mix & garlic powder in silken soft tofu with potato chips..... lotsa veggies, right? chick peas, tomatoes, corn, tofu, potatoes, onions, garlic... oh and the last of the 'carrot' cake and some nuts and pumpkin seeds
Sauteed seasoned courgettes, red lentils with sauteed soya curls seasoned in coconut/lime (M&S) plus a squirt of lime juice and
fried almonds. Alpro plain soya yogurt with a few drops of Cornish salted caramel and sweetener.
couscous - with cherry tomatoes, 1/2 cucumber, green onions, 1/2 bell pepper, olives, fennel seeds, garlic/onion powder, oh and chick peas - a drizzle of tahini on top and some oelek hot sauce
Red lentil & vegetable soup made in the IP served with soya chunks, a drizzle of evo and a sprinkle of yeast flakes.
Ww seeded toast with spread & Marmite.
Alpro soya yogurt with mango puree.
bit of a mish mash so that we would have lots of leftovers - used two Indian Tasty Bites - Bombay Potatoes and Channa Masala - boiled a bunch of potatoes and sweet potatoes cut in 1/2inch squares to match the potatoes already in the Tasty Bites - warmed up some baby peas - two pots 1/2 can of coconut milk in each, added 1 tablespoon of Curry Masala to each along with some cumin, coriander and cayenned - added a can of chick peas to one and the potatoes and peas to the other and then added each of the Tasty Bites to the appropriate pot - this allowed us to eat half of each and have leftovers and we each had a w/w pita to scoop it up with
Wide quick cook spinach noodles with a veggies sauce of fresh cooked tomatoes, zucchini, yellow squash, onion, garlic, lots of spices, bouillon, nooch and drop of vegan mayo.
Whole grain rice and red lentil pilaf made with courgettes/red peppers/peas, simmered in stock with smoked paprika
and soya chunks. Served with a sprinkle of yeast flakes/Nurrish parmesan style cheeze and a drizzle of evo.
Falafel, new potatoes, broccoli wings and beetroot salad followed by a strawberry summer cake. I made the cake yesterday using aquafaba and soda water and M will decorate it today. I bought some oat whipping cream and frozen strawberries and I'm sure M will use her imagination a little if her migraine doesn't get the better of her.
