Supper/Dinner Time! What's on the menu ?

I'm going to have some seitan roast from the freezer with roasted Brussels, carrots and broccoli. I also might have a small cup of butternut squash soup if I end up making that today.

Sounds good. I love the idea of having a homemade meal in the freezer. I will have to do the same or either make pasta, as I just spoke with a friend in Brighton for over 2 1/2 hours!
 
last night I made gnocchi with white kidney beans and a bunch of garlic and onion and a few sliced kalamata olives - a tbsp each of olive oil and budder to saute the garlic and onion and whole chili peppers, added the gnocchi and then the beans and lots of nutritional yeast and ground chili peppers on top - 1/4 whole grain baguette thinly sliced

I've only had gnocchi once, and never made it--did you actually make gnocchi using white kidney beans (cannellini?) ?
If not, how do you think a dough using pureed beans would turn out? I've made bars using beans and hated them, and their texture, but maybe a dumpling with a savory sauce would be good?

Maybe worth an experiment? Although it's always sad if it doesn't turn out well. I've made homemade gnocchi before. I should do it more often as it's so easy.
 
Apparently you can. You have to omit the egg which I'm assuming is ok since there are vegan gnocchi that are just potato and flour.

I did get the new pizza from Papa Johns last night. Vegan ham and pineapple. It was nice although the ham wasn't very strong tasting.

no, I didn't make the gnocchi - I bought it and combined it with the gnocchi in the pan - it pretty inexpensive in the store so not really worth the effort

last night we did a veggie bean dip - more veggies than beans - one can of rinsed pinto beans mashed, one small zucchini, 2 small onions, 1 large jalapeno, some olives sliced and lots of spices - scooped up with tortilla chips
