Supper/Dinner Time! What's on the menu ?

I'm going to try Plant-based Bistro's Mongolian soy curls. The sauce includes dates, rather than brown sugar, and I think that will be an interesting swap. I will have them with broccoli over rice with a side of edamame.

This was delicious! The only thing I would change is to rehydrate the soy curls in veggie broth, rather than water. I know this guy is trying to go low-sodium, but I think other than that, it's really tasty. I love the dates and molasses in the sauce. I thought the sauce was going to be too sweet, but it wasn't. It was a nice balance of sweet and savory, but not in a sugary way. I'm really loving dates lately. I'll be making this again!

Sounds like the mix I make for baked beans.
I have to soak in water, but I also rinse really well. I find them nasty if I don't, I guess it's like how some people get a bad taste from vwg.
I still have a good bit of soy curls left, I should try that recipe. Oh, and I have broccoli!

I would love this sauce with baked beans. Great idea!

I'll be having the Mongolian soy curls again, and I might add some veggie spring rolls as an appetizer.

I made Simnett Nutrition's air fried non-soy (fava beans) tofu recipe and put on rice w/raisins/peas/fennel seeds/spices and it was very good.

The tofu is made by a Canadian company in BC - Big Mountain Foods.

I made spicy peanut butter udon noodles - pretty simple - the sauce has peanut butter, peanut butter powder, maple syrup, tamari/soy sauce, rice vinegar, sriracha, cayenne, garlic powder, ginger powder, hot water.

I sauted some bell pepper and onion in a pan, boiled the noodles briefly and then mixed it all together. Tasty!

I'd like it if you'd say the type of noodles you use :yes: That sounds delicious! I'd probably use rice noodles if I had them. I never seem to have the right noodle to use for what I want at the same time 🙄

I had a Beyond Burger with iceberg lettuce, mayo and mustard, and pickles on whole wheat toast

Ikea pea protein balls with brussels, spinach and peas plus a drizzle of evo and some yeast flakes. They have
changed the recipe and I didn't like them.

Soya yogurt with salted Cornish sea salt caramel, almonds and sweetener.

ur, ummm, I did... udon noodles :D - they are particularily good IMO with spicy peanut sauce and pre-my-honey I also used to eat them with just sauted/roasted garlic and some butter - he only likes them with peanut sauce as they are too 'wormy' for his liking otherwise

in my noodley soup I use very basic ramen noodles which are only wheat & salt

we do use a couple of other noodles that come in the Mr Noodles packages and also another 3 minute noodle package - my honey mostly eats the Mr Noodles and he also likes some Pho rice noodles packages that I buy - I am not a Pho fan - I much prefer Spicy Kimchi

last night for dinner we had a burger w/cheez shreds/onion/pickle/mustard/ketchup/spinach and McCain's french fries with malt vinegar and ketchup and for dessert a few potato chips and hummus

I love Udon, but feel they're overpriced for their ingredients, but I guess they do take work to make :shrug:
I've been wanting to try and make this recipe

I made jackfruit ribz and broccoli

we only have them about once every couple of months and as the rest of the ingredients are inexpensive it really isn't too bad

love the chili oil recipe and that is kinda what we do when we make our aglio y olio as my honey loves chili peppers and so he usually puts about a teaspoon or so of olive in the pan with the full chilis and chars them before adding the garlic, onion and the rest of the ingredients

which is what he did last night as we had spaghetti with tons of garlic, onions, mushrooms, cherry tomatoes, kalamata olives and I made myself one of the miso tofu burgers on the side and a few thin slices of whole grain baguette
