Supper/Dinner Time! What's on the menu ?

my noodley soup was so big yesterday that I didn't feel like much dinner so we just had some hummus/hot sauce, potato chips, zucchini raw sliced, cherry tomatoes, kalamata olives and a couple of oatmeal cookies for dessert

I'm still bothered by loving gochujang one day, the second time with same thing, I despised it :shrug: Honestly I didn't like it in the past. I'm funny about peppers

Having cabbage and potatoes and making sausage, not sure if it'll be ready to have tonight

Taco Friday again - really loving the new Canadian made taco shells I found, they don't break in the packaging and don't fall apart when filled up - used Gusta ground and added a can of black beans so we have leftovers - chopped kale & spinach, pica, cheez shreds, salsa - so good

Tonight I am making a lentil loaf for the first time! It's in the oven right now, but I can't wait to try it! :D When it's done, I'll try some of that and I'm thinking about pairing it with some quinoa with veggies mixed in, mashed sweet potato and cooked broccoli, carrots and maybe some wilted spinach and some orange slices on the side. I am still learning how to create a balanced vegan plate, so I am probably way off on that lol I'm trying though.

Sure! I kinda cook like a 6 year old at a buffet, I like to play with food, so it's always different
cheese sauce with yogurt

INGREDIENTS

soak 1/2 cup cashews drain and rinse add to pot with 1/2 cup whey liquid, and blend w immersion blender
add 1 cup soy yogurt
1 teas dijon
1 Tbls tomato paste
1/3 to 1/2 cup nooch
pinch of garlic powder
salt & pepper
mix 1/4 cup tapioca starch w 1/2 cup water and add.
Mix well and cook over med heat stirring with spatula

This is basically the sausage recipe
I always add about equal liquid to vwg by volume, so I used 1 3/4 cup water (for broth, I added Vegeta seasoning) I also changed up the seasoning, left out the oil and miso. I don't follow the directions either. I always mix all the liquids together first, with seasonings so I can taste if it;s just right. I add vwg to the liquid and just mix till incorporated. You want it all to come together, not too wet, nor dry, just to see some strands starting. Then let it rest an hour or so. I use Instant Pot over water for one hour

I just ate my "dinner". It was Sushi, made by Japanese Sushi chefs at my grocery, Market of Choice, Eugene. It was made of seaweed, whit rice, very fine carrot bits arranged so the edge of the bundle faced out, a little avocado wedge, and a small bit of cucumber. That was topped with a few drops of soy sauce, wasabi, and sliced fresh ginger. Delicious and no cooking for me, after grocery shopping for the next 4 days. I also had 1 tangelo for "dessert". I will eat a spinach salad topped with tomato in about 2 hours.

Air fried soya curls seasoned with Inspired to cook mild & smokey barbecue seasoning served with
peas and a chicory salad with vinaigrette and yeast flakes.

Soya yogurt with apple puree.
What is or where is "Inspired to Cook". I checked Amazon books and Googled before asking. Also... I have never used Soya Curls. I Googled those, and Google said they are dehydraded. How do you rehydrate and spice them?

Butler Soy Curls - they are vital to our life.... lol ..... seriously, with the tariffs coming I am going to buy a few more bags tomorrow (we already have about 10) as it is the one USA made product I am allowing myself to buy. I rehyrdate them in my soups or if I am using them to air fry or in a chkn stir fry or as an orangy beef then I soak them in a bowl or ziploc bag with water and spices like poultry seasoning for chkn and some garlic powder and cayenne or maybe Better than Boullion roasted garlic or veggie - then I just pour off or squeeze out any excess moisture and air fry or stir fry.

Last night for dinner we had perogies with a side of tofu burger and 1/2 package of bacon tempeh (I didn't use it for brunch yesterday). They were sauerkraut perogies and I had a partial jar left of sauerkraute so had that on the side also.
