Whatcha Eatin?

Lentil and vegetable/chickpea/beans in coconut milk. A shop bought meal so I had to jazz it up
as it was bland. I added some Tajin/smoked paprika/stonewood seasoning/evo and yeast flakes.

A red cabbage & grated carrot slaw with Dijon mustard/pumpkin seeds/yeast flakes.

An orange.
 
So I bought a container of Just Egg to try before I make my own version just to compare. I made a spinach, arugula and cheese omelet using Trader Joe's vegan mozzarella. I also put in red onions. And topped it with hot sauce. I was pleasantly surprised at how delicious it was!

If the homemade version doesn't work out, Just Egg will be an occasional treat because you really don't get much for your money. I had to use two servings to make the omelet, and it could have used half a serving more (it claims to have eight servings), but I still really enjoyed it. The vegan mozz in the omelet was reminiscent of an omelet made with American cheese (I used to get cheddar, but I think adding some nooch might help add tang). Fingers crossed that the homemade Just Egg version works out! Oh, and I had some mixed berries on the side.

We went to Ask restaurant today and we shared a garlic bread and then I had a salad and fries and we shared a dessert. I still feel full up now. Drinking some vegan Cava from Aldi now.:)
