I made a veggie curry with carrots, broccoli, onion and sweetcorn. I wouldn't normally put sweetcorn in a curry, but I have a big bag of corn in the freezer.
Crispy cauliflower steaks, only I don’t bother trying to cut into steaks because you only get two then the rest of the cauliflower crumbles. So I just cut it from the get go and do it that way. It’s tastes exactly the same.
The only downside is that I could eat the entire cauliflower in one sitting. But I don’t…I force myself to at least have it for two days. If it was just the cauliflower I wouldn’t care but it is brushed with oil. I measured to see the least amount that I could use and still have it be good and it’s two tablespoons. So I’m getting a tablespoon of olive oil in a serving. I feel like it's a lot. It certainly can’t help my calorie intake. But whatever. It’s so good. I’m not going to stop making it, lol.
