When you make soup like that do you use plant based milk or cream?

I actually don't usually add any cream or milk. It's because it's pureed that I call it 'cream of'. I sometimes will
drizzle either some evo or soya cream on top before serving. I really like layers of different flavours and also textures.
 
I was going to have the last of the Just Egg for an omelet, but it went bad. So I took what I was going to include in the omelet and made a quesadilla instead. It had sautéed kale, red onions, pesto, vegan cheese and olives. This might be my new favorite quesadilla. I loved the kale in it! I wanted to have avocado in it, too, but there wasn't room, so I made some guac and had it with some tortilla chips. What a great lunch!
