Whatcha Eatin?

I made flatbread, so I'm having a small pizza topped with pesto, onions, buffalo soy curls and vegan feta crumbles. Delicious! Also, a clementine.

I cooked some elbow macaroni in my slow cooker- and this time, I kept track of the time, checking often, so it came out al dente. I had some of it for lunch with a drizzle of canola oil, some organic garbanzo beans I slow-cooked on the weekend (with no salt), and marinara pasta sauce. YUM. The rest went into the fridge after it had cooled (also with a bit of sauce).

I have had too many fries the past few days!

I am going to make smoothies with the rest of the frozen fruit for breakfast. I have spinach, bananas, strawberries and blueberries.

The other half of a chipotle tempeh wrap that I got at the Shoreline Diner. I had to go by the exit for it on my way to a hair appointment after visiting my dad, so I had time to grab lunch there. I love that diner. (@KLS, you and I need to meet up there for a lunch or something!)

I am having a vegan sausage wrap with pesto, vegan feta crumbles, onions and dill pickle slices with a side of tortilla chips and a clementine.

Baking mince pies was a holiday tradition in my family. I'm embarrassed to admit it was a LONG time before I realized that the prepared filling we used actually contained beef!!! It always seemed to be nothing more than dried fruit, sugar, and spices.
I knew that at a young age because my grandmother always bought the small box of Nonesuch. I was pretty horrified it had beef suet!:hurl:
She would make a pie at Thanksgiving. I kept her last box for years after she died.
