Whatcha Eatin?

Baking mince pies was a holiday tradition in my family. I'm embarrassed to admit it was a LONG time before I realized that the prepared filling we used actually contained beef!!! It always seemed to be nothing more than dried fruit, sugar, and spices.
I knew that at a young age because my grandmother always bought the small box of Nonesuch. I was pretty horrified it had beef suet!:hurl:
She would make a pie at Thanksgiving. I kept her last box for years after she died.

I'm trying to use up my food before we go away. I had a tofu stir fry for brunch. I used the last of a jar of peanut butter to make a sauce with maple syrup and soya sauce. It was very nice, but so filling that I froze half of it for leftovers.

today will be leftover Saturday's steel cut oats/split red lentil - I am really happy that I started this habit of making extra on Saturday and keeping it for Tuesdays - I will add berries, banana, peanut butter, a bit of maple syrup, some turmeric, cayenne etc

I had a Cornish pasty for lunch from a bakery called Loaf in Penzance. It was nice and obviously made vegan. My husband had a vegan croissant and we also bought a brownie and a raspberry tart.

It had this sign outside the shop, as a joke.😁
