Whatcha Eatin?

I have a small amount of leftover steel cut oats from Saturday so I am going to have that with some banana and berries etc and a couple of slices of my homemade bread with peanut butter.

I wish I could name every vegetable that goes into my noodley soup but because I use a those frozen food asian variety and mixed variety it is a long list - which is kinda why I am addicted to it - okay, so maybe it is the noodles and soy curls that I am addicted to.... I do eat all the veggies first though..

So that's what is on the menu shortly.

I had a small breakfast so I'm having a bigger late lunch. A Redefine burger in a bun with a salad with avocado, tomato and bell peppers with vegan mayo.

I most recently had a large bowl of rolled oats, an apple, and a chocolate chip Clif bar; water to drink. Later I had a snack of several sprigs of fresh parsley. (Or maybe I had the parsley with the oats...) I had a navel orange later, after I had brushed my teeth, as I had learned that an orange (or any strongly acidic fruit) can temporarily weaken tooth enamel.

I spent the day at a pal's in the Luberon. It was a lovely sunny day but too cold to eat outside. She made me a huge vegan meal and I ate all of the dishes which were tasty.

A margarita cocktail served with nibbles.
A Green Cuisine pan fried burger served with red lentil stew plus a tossed salad with evo vinaigrette plus fresh coriander.
A selection of bread from the local bakers; raisin & walnut bread, yeast corn bread, sourdough baguette.
A chocolate mousse made with aquafaba.
Moist apple mini muffins.
 
It certainly was. Moreover, she made me a plant based meal.

The only drawback was that I got caught up in Friday traffic and it took me nearly 2 hours to drive back home! :cry:
Ugh...I feel your pain. That happens to me every time I visit family in New York. 💙

this morning is the usual Saturday fare of steel cut oats/split red lentils, cranberries, date, molasses, ground flax, strawberries, blueberries, black berries, raspberries, banana, hemp, maple syrup, pumpkin seeds, walnuts with a side of toast w/peanut butter

Just got back from a walk (1.30) in the neighbourhood. I'm making a warm salad made with potatoes and carrots (IP), sliced
avocado and seasoned soya curls made in the AF. Fresh parsley/chives and vinaigrette plus a sprinkle of yeast flakes.

A juicy persimmon that a neighbour gave me. I actually have over a kilo of the former.
