Whatcha Eatin?

I had pancakes topped with blueberries and maple syrup, a side of home fries and two clementines. Nice brunch.

A buddha bowl; brown lentils, grated red cabbage, grated carrots, roast red peppers, avocado, crumbled
smoked Cathedral City, vinaigrette and yeast flakes.

Soya yogurt with a few drops of chocolate extract plus sweetener.

yesterday's brunch was breakfast beans/onion/jalapeno on toast with a side bagel with Just Egg patty/cheez shreds/jalapeno on top and berries/banana

today is going to be noodley soup!!

A brown lentil salad ; lentils, warm air fried plant based diced bac'un, chopped parsley, Dijon vinaigrette plus yeast flakes.
A bowl of peas with yeast flakes and evo.
Wholemeal toasted bread with Violife garlic/chive cream cheeze.
A pear.

A mung bean just egg omelet and some bannock bread with vegan butter. I didn't have any vegan cheese, so I just added nooch flakes and olives for some tang. It has onions and spinach in it as well. And it's topped with hot sauce, of course. :)

Absolutely! The first thing I do is rinse 1 cup of the mung beans using a fine mesh strainer. I rinse until there are no bubbles left, as it bubbles up when you start rinsing them. Then i soak them in water for at least 8 hours. It's good to do it overnight because after that, making the eggless mixutre is pretty quick and easy.

Here is the recipe I use (it's kind of a combo of Cheap Lazy Vegan and another YouTuber, whose name escapes me at the moment).
After discarding the water from the beans (I put them in a colander to drain after soaking), add them to a high-speed blender.
Then add the following ingredients to the blender:
1 1/3 cups of water (I use a combo of half unsweetened nondairy milk and water that adds up to 1 1/3 cups)
2 TBSP nooch flakes
1 tsp baking powder
3/4 tsp onion powder
1/2 tsp of garlic powder
1/2 tsp of turmeric
1/2 tsp of salt

Blend it all until smooth. They are ready to use now. When you eat them, add some Kala Namak after cooking for an egglike flavor. This really makes a difference in the taste of the eggless mixture, IMHO.

One note, they are a bit gummy compared to Just Egg, but I don't really mind it. With the Kala Namak and some hot sauce, they really do the trick for me for omelets, scrambled "egg," etc.

A sandwich made with baguette, Flora spread, Dijon, mashed avocado and La Vie smoked thinly sliced protein.
A white cabbage slaw with Dijon vinaigrette, chopped pecans, bacun bits and yeast flakes.
A juicy pear.

You are welcome. I couldn't believe how easy it was as well. The only "hard" part is waiting for the beans to soak.:)
