it was faux Swiss Chalet night last night - lots of white and sweet potatoes done in the air fryer, a few different Gardein chckn tenders and wings plus a few meatballs (didn't have enough of any one) - baby peas - all cooked and topped with Swiss Chalet sauce - a bit of popcorn and some chocolate chips for dessert
I soaked my chickpeas last night, so tonight I'm making falafels from scratch. I will fry mine in avocado oil. I just make them traditionally flat shaped, so I can shallow fry them in a frying pan. I can't wait! I will probably use pita and make a falafel wrap with some lemon/tahini sauce, and some crispy veggies. That's if I don't fill up on them as they come out of the pan. lol.
I've got a bean chilli cooking. It has a few different types of beans, onions, mushrooms, pepper and carrot in. Served with rice & grated cathedral city cheese.

I'm having pasta with Aldi meatless balls, homemade sauce from my friends I'm catting sitting for, and some wilted spinach. They made olive tapenade as well, so I will have a dollop of that in the pasta as well.
we had a snack, late afternoon, of plain croutons dipped in hummus so we weren't terribly hungry for dinner so I made couscous with chick peas, celery, green onions, olives, bell pepper, lots of spices and made a sauce for the top from hummus, tahini, lemon juice, maple syrup, mustard, a bit of tamari, rice vinegar and some caper juice
I found some potatoes on sale for a buck a pound yesterday. I'm making latkes for dinner tonight. I'm just going to roast some additional root veggies to serve with them.
I prepped some sweet potato, onion, garlic, peppers last night. I am going to throw it in my crockpot with black beans, stewed tomatoes, broth and spices for some easy chili for dinner.
pinto bean burritos last night - mashed a can of pinto beans added some chipotle/adobe sauce, a bit of leftover pizza sauce, spices - sauted a ton of onions, bell peppers, jalapenos in olive brine - pico (green onions, cherry tomatoes, olives) for the top - salsa - chopped romaine - cheez shreds - whole grain tortilla wraps

I used Penzeys Turkish blend, which for me is just right. I tasted cumin by itself, since my son got a fresh jar of organic cumin--I don't understand how I used to like it, it's my least favorite popular spice
