I'll be at my parents' house tonight, so I'm not sure what's on the menu, but I know my mom has Beyond burgers in the freezer, so I might have one of those with some roasted veggies.
decided to go the someone's tradition of fish on Good Friday and had Gardein fillets with another huge caesar salad - chocolate chips for dessert
I also thought it would be interesting to know why "fish on Good Friday" and when I googled it I discovered that because JC's body was sacrificed on Good Friday 'they' decided to stay away from 'meaty' animal parts and so fish was deemed acceptable.

I picked some of my habanero peppers and roasted them with garlic and grape tomatoes then made hummus. The hummus is very hot, but good.
I put that on a roll with olives, pickle, mustard and vegan mayo.
I made a hammy seitan using Orrington Vegan Ham seasoning for the first time. I've wanted to try it for so long, but I guess my memory of ham is mostly based on the glaze! It's okay, but I ended up using a lot. I simmered in broth with the seasoning too, and now making a split pea soup in it.

As it is Easter, I looked for some vegan prinskorv but couldn't find any so we are going to have veggie balls spiced with cloves, allspice and white pepper, a green salad, vegan beetroot salad and vegan potato salad followed by Ben And Jerry's vegan cookie dough ice cream.

Easter dinner was Gardein Turk'y rolls with a pile of boiled potatoes and a separate pile of boiled root veggies (squash, parsnips, carrots, turnip) - gravy from the rolls, cranberry sauce - I decided last Christmas that I wasn't make 'stuffing' (dressing) anymore as I love it too much and it takes up too much space in my stomach with a meal like this - I eat lots of bread and croutons in my caesars alreadyso although I missed it I don't miss feeling over full.
