Supper/Dinner Time! What's on the menu ?

so Monday night we made a huge pot of Veggie Bean soup into which we put everything but the kitchen sink - carrots, parsnip, onions, celery, bell pepper, potatoes, sweet potatoes, spices, kidney beans, pinto beans, a can of tomatoes.... and had some w/w bread with it and then some of the leftovers we had again on Tuesday night only I added another can of black beans and had whole grain baquette with it

last night we had breakfast burritos for dinner with tofu, bell pepper/onions, spinach, spices, olives, salsa mixed in

I am doing my pre homemade seitan steaks with asparagus tonight.

Edit. Everything was so perfectly cooked. Steak in wine reduction with caramelized onions and asparagus with pressed garlic.

I'm going to have the Juicy Marbles steaks tonight in pitta bread with salad and chilli sauce. Like a kebab.
I have seen the Juicy Marbles steaks here in Sweden but they are absurdly expensive. Are they any good? I might try some on occasions if I think the cost is worth it.

I really like them. They are sometimes on offer here. I tried the Redefine meat again the other day, but I think JM is much better.

Saturday night was our usual spaghettini night with tons of fresh ripped basil, tomatoes, garlic and a bit of olive oil - my basil plant is almost totally decimated

last night was a pack of sauerkraut perogies with sauerkraut on the side and some olives

I'm having another pineapple stir-fry with soy curls, this time with carrots, cabbage, beet greens and onions. I really like the pineapple in the stir-fry. I am going to make a sesame-ginger sauce for it as well. I might have a couple of veggie spring rolls, too.
