so Monday night we made a huge pot of Veggie Bean soup into which we put everything but the kitchen sink - carrots, parsnip, onions, celery, bell pepper, potatoes, sweet potatoes, spices, kidney beans, pinto beans, a can of tomatoes.... and had some w/w bread with it and then some of the leftovers we had again on Tuesday night only I added another can of black beans and had whole grain baquette with it
last night we had breakfast burritos for dinner with tofu, bell pepper/onions, spinach, spices, olives, salsa mixed in
