Supper/Dinner Time! What's on the menu ?

Made the same curried lentil soup but with chickpeas this time. Now I'll start another pot of yogurt.
I'm so amazed plain soy yogurt isn't a thing in the US. I think Silk is the only one I know. It's so great for so many applications

Brussels sprouts, onions and mushrooms with a glaze of miso, Dijon, and maple syrup, and a balsamic drizzle. Side of wild rice blend
Just opened the maple syrup and it's far too good o_O

I had vegan nachos at a brewery in New Hampshire (the one where my nephew Sean works). They were made with vegan chorizo and vegan cheese. They were super delicious, and I have leftovers.

yesterday I threw a half a dozen each of sweet and white potatoes in the oven to bake and then had some gravy on about half of them and as a side had some of my crock pot beans from the freezer.... wayyyyy to much food and I was very full

I had vegan sausages and baked potatoes with broccoli and gravy. Delicious. I fancy something sweet like pie now as I have been watching xmas YT videos all day.

Yesterday I made another bread, and now a Muharamma--red pepper, walnut and red lentils dip. red lentils were added as I needed more to thicken.

How do you have leftover nachos? :shrug: . Not just the obvious as how you didn't finish them, but how to reheat? Actually, sounds like they'd turn to enchiladas!

Yep, like soft tacos, but they were still good. I added a few tortilla chips for a little more crunch. The flavor was still really good, and the cheese was still melty. :)

Our starter was a saffron doughnut because we were too hungry to wait, then we had a chickpea and veg Paneng curry with basmati rice followed by a large clementine.

I'm not sure what I'm having for dinner. I will be going home (still taking care of Mom) hopefully tonight, so I would like to make something with either soy curls or tofu.
