Supper/Dinner Time! What's on the menu ?

left deciding what to eat until late so threw some water and stock in a pot, a can of whole roma tomatoes, tons of a variety of frozen veggies, a can of drained romano beans, some leftover potatoes - had a whole wheat pita with it and sprinkled hot sauce and nooch on top

I'm not sure what I'm having for dinner. I'll be going home tonight to do some cooking for Thanksgiving and some cleaning in anticipation of a visit from my friend in Minnesota. Going to be a busy couple of days, lol. Today I'm doing chores at my mom's: laundry, changing bedding and cleaning up the bathrooms.
 
My husband has had to go gluten, wheat and soy free! This seems a very big change and so I'm navigating this and working out meals etc for the week.

Tonight we had gluten free pasta with a lentil and tomato sauce. It also had onions, mushrooms and broccoli in it.

Gf pasta isn't great, is it. 🤣

I made noodles, peas, onions, peppers and hammy with eggy salt at serving. I intened it to be a soy yogurt based sauce, which I've been getting really good at, but my son finished it off, so just sauteed in plant butter and seasonings and garlic

@hungryraccoon If I had to pick one grain as my favorite, it would be oats. I just checked, and although pure oats are gluten-free, it is common for them to be contaminated with gluten (during storage or processing, I think...) Other grains are gluten-free, as well- but I suppose contamination is possible with them also, unless precautions are taken during processing. The two of you undoubtedly know more about this than I. (My diet is very grain-heavy, and I try not to go overboard on any one grain- but at the moment, my main concern is avoiding foods with a high glycemic load. My HbA1c levels have improved, and evidently I can still eat potatoes, but I have to be careful).

I'm sorry I couldn't be more helpful. I wish you well, and hope even more new tasty, inexpensive veg foods for people with such dietary restrictions are made available soon!

Is this just an elimination diet, or is he diagnosed?
Only gluten free noodles I like are rice and those sweet potato glass noodles
