Supper/Dinner Time! What's on the menu ?

I dislike shop cooked beetroot and always buy them raw. In the UK they sell small bunches of baby beetroot for as little as 75 p.
These vacuum packed ones are cooked perfectly though! If I could still find them fresh I'd cook them, but they haven't been looking good for some time here. I dislike canned

we had our (Just Egg) mung bean omelette kinda thingy with breakfast beans on toast, grapefruit - the mung bean was not a hit as it was way too thick

I've tried that recipe with so many tweaks and don't like it at all. I've used milks, water, baking powder, no baking powder, oil, no oil, thick, thin....
I did kinda like Just Egg though, but it wasn't something I'd get unless it came way down in price

I don't like large beetroot. I've never been a fan but since I tasted roast baby beetroot in California, I started eating them.

I would like to try it again but not for a bit.

I used the leftovers of the 'omelette' in the beans soup I made for dinner and it dispersed okay in the soup although I had to physically mash it. I had some pinto beans in the freezer and just added a bunch of frozen veggies and kale and some leftover sweet potatoes too. Added spices and drizzled tahini on top along with plain croutons and it was delicious and satisfying.

Nut roast with JO gravy, brussels, carrots, roast parsnips, French beans, broccoli,chestnuts and boiled potatoes. Sadly, I couldn't roast the spuds as there was a dead corpse roasting in the oven where I was invited.

A tossed green salad with vinaigrette/yeast flakes.

I'm not feeling that hungry as I have a cold. I didn't get a main xmas dish this year so we are having vegan steak pies instead with pigs in blankets, roast potatoes, veggies, stuffing and gravy.

We have vanilla and raspberry ice cream with fruit and cream for dessert.

Sounds wonderful. Strangely enough, I've been craving Swedish Glace since last night.
 
Christmas eve we just had popcorn and a banana split (with no ice cream for dessert)

Christmas day we saw an ad for a hamburger and changed our mind from having Gardein Turkey etc to have a hamburger with poutine (french fries, gravy and cheez curds). I saw the package of "cheez curds" in a new grocery store a week or so ago and thought we'd try them - they were good and they didn't go gooey like regular cheez curds would... still a very nice meal and I also had a package of Apple Cinnamon Phyllo which we had for dessert.

since our lunch was large and late, last night we snacked on a Blue Cheese "Nuts for Cheese" triange with some oat cracks, olives and I heated up 3 of those Miso Tofu burgers that I am addicted with and put some of the cheez curds on top and we cut them into small pieces and ate them plain just the way they were

A vegetable & white bean soup (parsnips,courgettes,cauliflower, onions, diced tinned tomatoes, etc served with a sprinkle of yeast flakes/smoked paprika and a drizzle of evo.
A small multigrain baguette sandwich with Flora, Dijon mustard and sliced vegan deli.
An orange.

I made cutlets with white beans instead of chickpeas, as my mom didn’t have any chickpeas. I also had roasted broccoli, potatoes, carrots, Brussels sprouts and asparagus. The cutlets were delicious! Nice to know I can use something other than chickpeas for the cutlets if need be.

I did try the chickpea/cutlet recipe a couple of times, but found it to have a raw taste. Does using the white beans make it any different. I must say, I love the idea of the recipe but not so much the end result.
