Supper/Dinner Time! What's on the menu ?

I boiled a few well chopped potatoes and a small sweet potato, added some mixed frozen veggies and then added a Chana Masala Tasty Bite to the pot - it was very good and on my second helping I added a few dollops of hummus and some plain croutons for some crunch.

hummus and salsa scooped up with tortilla chips and I also made up a package of the miso tofu burgers as they were out of date and cut them into pieces and also dipped them in the hummus and salsa - I am not sure why I love those so much as they are a bit dryer than normal burgers and so have some chew to them - also they are just $5 for 4 so very reasonable

I'm going to have breakfast for dinner: a mung bean eggless omelet with onions, spinach and olives and some roasted potatoes.

I did Cheap Lazy Vegan's rice paper sushi squares again, using chickpea salad as the protein. I also had veggie spring rolls.
I think I will have this again tonight, as I have leftovers -- if I don't eat them up for lunch, haha.
If that happens, I might make some buffalo soy curls and have them in a wrap.

Yesterday airfried fish and pan zucchini. Today I put leftovers in a burrito with lost of hot sauce (for me) and salsa. There was only 2 fish left from yesterday, improvise.

What is fish?

I had a chickpea puree with brussels plus evo and a sprinkle of yeast flakes.
Granary baguette with Boursin cream cheeze which I don't really like.
A coconut milk yogurt with a few drops of vanilla/chopped walnuts and sweetener.

I made a hot couscous last night w/sauce and it was delicious - my honey always ask for mushrooms in the couscous and so I had very large ones which I sliced very thick and put them in the pan first - also cut onions and garlic in large pieces, carrots and celery in small pieces - a can of chick peas, some green peas and then added the couscous at the end to the pan - the sauce was hummus, mustard, lemon juice, maple syrup, rice vinegar, soy sauce, garlic powder - it was all delicious and we ate every couscous molecule.

I had a vegan prepared meal from the market my mom goes to. It was tempeh and potato hash. It was pretty good. The tempeh was supposed to be flavored like sausage, but it could have used a bit more flavor. That said, I was happy the market carries several vegan meals.

I went and bought more of those Kimchi dumplings, which I disliked the first time I had them, however, adding them to soup made them incredible so I went back and purchased more yesterday and we had that for dinner last night - took the packets from a dollar store Kimchi noodle package and added lots of Thai Style frozen veggies, plus kale, mushrooms and lots of soy curls to the pot and then added the dumplings for the last 5 minutes - so good and the same store had plant-based cherry streudels on sale so I bought a box and we ate them all.... I will make it again when I have some cabbage and I think that will make the dumpling soup even better.

yesterday's lunch was large so we had snacks for dinner - roasted pumpkin seeds/peanuts for an appetizer, potato chips dipped in hummus with hot sauce and for dessert, a few melted dk chocolate chips over a split banana with almond butter...
