I was just thinking I fancy something like that.we had a simple dinner after a large brunch - I mashed some pinto beans, added some spices and chipotle sauce and heated them up and used it as dip with salsa and hummus and tortilla chips - a few nuts for dessert

I ended up having the tofu. I made Cheap Lazy Vegan's gochujang tofu bowl with edamame, broccoli and rice. I didn't have room for the carrots and onions, lol. The tofu recipe is a keeper. I loved it. I made the Swedish chocolate balls again for an outing on Thursday, but I had to have one -- ya know, quality control and all. ;-)

I had the last of the leftover mole chili with steamed whole wheat couscous with raisins plus a sprinkle of Tajin.

I thought the same when I saw the recipe, but I think the heat tempers the sweetness somewhat.I did look up the recipe but that would be far too sweet for my liking.![]()

It does seem like a lot, but I did get four servings out of it.That was a lot of sugar and tomato paste in the recipe.
I have a tub of gochujang paste in my fridge that I have never used! I always go for Frank's hot sauce instead.
I have some vegan chicken thighs that we are going to have for the first time. Maybe with chips/fries and salad.
