Supper/Dinner Time! What's on the menu ?

we had a simple dinner after a large brunch - I mashed some pinto beans, added some spices and chipotle sauce and heated them up and used it as dip with salsa and hummus and tortilla chips - a few nuts for dessert

It will be a toss-up between a tofu grain bowl or a black bean burger, though I did have a Beyond burger last night. :D I'm leaning toward the tofu bowl. I think the bowls will have air-fried tofu, rice (or maybe quinoa), edamame, broccoli, onions and carrots with some sort of sauce, maybe an Asian sauce.

I ended up having the tofu. I made Cheap Lazy Vegan's gochujang tofu bowl with edamame, broccoli and rice. I didn't have room for the carrots and onions, lol. The tofu recipe is a keeper. I loved it. I made the Swedish chocolate balls again for an outing on Thursday, but I had to have one -- ya know, quality control and all. ;-)

I had the last of the leftover mole chili with steamed whole wheat couscous with raisins plus a sprinkle of Tajin.

Gochujang is a Korean chili paste with a good amount of heat and a bit of sweetness. It was the base for a sauce for the tofu. It’s really good!
 
I have a tub of gochujang paste in my fridge that I have never used! I always go for Frank's hot sauce instead.

I have some vegan chicken thighs that we are going to have for the first time. Maybe with chips/fries and salad.

I use the gochujang paste in my noodley soup along with miso, love it.

Pizza night last night - lots of green onions, pineapple, sliced sausage, mushrooms, green olives, cheez shreds - delicious.
