The rest of a quinoa salad bowl that I had for lunch at a restaurant yesterday. It was so delicious. It had baby kale, arugula, spinach, roasted asparagus, avocado and chickpeas with a healthy dose of quinoa cooked with finely chopped red peppers and carrots. It had a lemon/olive oil dressing. It was the best quinoa bowl I've ever had at a restaurant. I now want to try to replicate this at home.
