Whatcha Eatin?

I had crackers with vegan butter, ham and cheeze. Then I had two satsumas. They were unusual as they had yellow peel, but were orange on the inside.

I have some grocery shopping to do so supplies are low - reverting to a Kimchi Spicy Noodle bowl from the dollar store today - I may add extra vegetables and maybe even more noodles....

A sandwich made with ww bread (not nice as it has sugar) mayonnaise/Dijon mustard/a slice of chickpea protein/chopped spinach.

A soya yogurt with a few drops of lemon plus sweetener.

A juicy pear

Whole wheat spaghetti with pesto sauce made with fresh basil/chives/parsley from my pal's garden, with pecans/almonds/evo/a sprinkle
of garlic and some pasta water served with Vermondo parmesan style cheeze and a sprinkle of chipotle flakes.

A persimmon from the local vegetable farm.

A salad; grated carrots/grated red cabbage/chopped celery/pecans/chopped chives & parsley plus a Dijon vinaigrette.

Finger sandwiches made with ww bread/spread/Dijon and sliced chickpea protein.

The rest of a quinoa salad bowl that I had for lunch at a restaurant yesterday. It was so delicious. It had baby kale, arugula, spinach, roasted asparagus, avocado and chickpeas with a healthy dose of quinoa cooked with finely chopped red peppers and carrots. It had a lemon/olive oil dressing. It was the best quinoa bowl I've ever had at a restaurant. I now want to try to replicate this at home.

chickpea puree plus vinaigrette.

A soya yogurt with chocolate extract plus sweetener.
