Whatcha Eatin?

I was today years old when I realized I could make onion dip with vegan sour cream and mayo. Just add onion and garlic powder and black pepper. No salt and I had it with no salt potato chips/crisps. It was so good!
 
Some day when I'm ambitious I will add some caramelized onion.
I agree to a low sodium diet. Yet I would rather have my onions raw. Fried foods make me feel unhealthy and give me heart palpitations! I just overcooked my broccoli 😥

How about dehydrated onions?

I always made it with the onion dip packets. I used to use silken tofu, but it's been tasting weird to me. Gotta try it with my culterued cashews and soy yogurt next

I love the packets...my favorite is Simply Organic onion dip. I did see that I could use dehydrated onions. I'll have to get some so that I have them on hand. I could probably use fresh onion too if I dice it really small. But I had just seen a recipe that called for caramelized onions, and it sounded good.

I bet that one has less sodium! I just get one at Aldi.
...and I've found a big difference in those canned fried onions. I would get the ones from Aldi, which were pretty greasy, but large pieces and tasty. Frenches went on sale I tried those thinking the name brand would be good. Those were not very greasy, but more broken up and terribly salty! No good.
Tried Trader Joes. Those were awful. Not greasy, not salty, but not even like onions. Awful aftertaste
I shouldn't buy them though cause I eat too many when I first open a can

I'm sorry about your broccoli. It's still edible overcooked, but it's amazing when it's just barely steamed- cooked, yes, but still bright green and a bit crunchy. That's how I cooked mine a few days ago; I cooked some macaroni separately and had them together.

I overcooked broccoli last week. It was practically mush lol. I just mashed it and had it with mashed potatoes. It was delicious!

Overnight oats again, this time I added chocolate syrup instead of maple and it wasn't as nice. I chopped up a banana on top and had a cup of green tea too.

I completely agree barely steamed and still bright green is the way to go. Although it was edible over steamed it had a yellowish and unappetizing look which brought me down a bit. I had some buckwheat pasta as part of my routine but eventually removed pasta altogether as any pasta I ever experimented with made me feel heavy for some reason!
