sidenote: about 2 months ago, on many of your recommendations, I started buying the new Daiya cheez as opposed to the Violife which I had been buying for years - the new Daiya is meltier and a bit less expensive and is tasty - ISSUE on the packaging it states that it should be used within 7 days of opening.... rarely would we eat that amount of cheez in one week... last night's pizza had way more cheez that I would have liked to use but it had already been open for more than a week... QUESTION does anyone have any experience with not using it all within a week or so and it still being okay?
I ony had issues with Violife when it first came out and have never had one since even though the opened package can sit there for a two or three weeks, if not more

I do freeze vegan cheese now. They do crumble after, but if using them to melt, that's good. I esp like it like that for pasta, like parmesan
do you make the rolls with wet rice paper wraps? i can't get over that kinda gummy texture, always wondered did i do something wrong. I love them friedI'm going to have veggie potstickers and some fresh spring rolls that I will make with carrots, rice noodles, lettuce and peanuts.
