Plant Kitchen Southern style schnitzel served with spicy roast parsnips, baby potatoes with olive oil spread.

I think I am calling what we had last evening "Gnocchi Fiesta" - I sauted garlic, onion, bell pepper, mushrooms, olives, with spices and then added a can of white kidney beans and then added a package of boiled gnocchi along with spaghetti sauce leftover from Saturday - it was delicious and there were leftovers.

I wasn't feeling well after my flu jab so I had a nap and now can't be bothered to make soup as I planned. I'm just going to put a vegan pizza in the oven and make a quick salad. I think the pizza is "salami" or "pepperoni" and I'm going to add the leftover bell peppers from yesterday.

my honey made a big batch of taboulli - tons of garlic, parsley, roma tomatoes etc and so I made some falafels and sauce for it all - I also had some of the leftover gnocchi fiesta and my honey had a pita with his

I had a rainbow vegan lasagne ready meal, but I still feel hungry.
wow we had a huge meal last night - our usual (although a bit less pasta) aglio y olio spaghettini with tons of mushrooms, tomatoes, roasted garlic, olives and then we also ate the leftover tabouleh with some thin slices of whole grain baguette

Falafel with mango chutney, green salad in an Italian style dressing and small boiled potatoes.
I also had three leftover falafel from a few nights ago along with a chick pea salad - cherry tomatoes, green onion, olives, spices, hot sauce - some plain crackers on the side.

I'd forgotten what tabouli is, although I remembered making it a long time ago after I looked up the ingredients. Falafel goes PERFECTLY with it.

we also had chili for dinner last night - from the freezer on a wonderful mexican rice that my honey made using a frozen vegetable mix (corn, peas, carrot, green beans, lima beans) - chili on rice... delicious

sidenote: about 2 months ago, on many of your recommendations, I started buying the new Daiya cheez as opposed to the Violife which I had been buying for years - the new Daiya is meltier and a bit less expensive and is tasty - ISSUE on the packaging it states that it should be used within 7 days of opening.... rarely would we eat that amount of cheez in one week... last night's pizza had way more cheez that I would have liked to use but it had already been open for more than a week... QUESTION does anyone have any experience with not using it all within a week or so and it still being okay?
I ony had issues with Violife when it first came out and have never had one since even though the opened package can sit there for a two or three weeks, if not more
